I've been drooling over all the new-to-me seed varieties on a website online, and came across a description of salsify. I'll have to try it! But, oyster-like flavor? I feel like that could go either way. Just curious if anyone has eaten it, prepared it, or liked it. I'm always up to try something new!

I'm new to parsnips here in zone 3a. Leaving in ground for winter harvest is not an option. Would love to hear some successful ways to store them. We have a cold storage room. Planning to freeze some of the smaller ones that won't keep as well. Looking forward to ideas! 😀
I tried growing this for the first time from some cuttings I got on Baker Creek. I planted them late so they didn't get as big as I was hoping, but I think I still got a decent yield. I am still deciding how I want to use them, but what do you all think?
