sourdough start versus pre-ferment
I just baked my first sourdough bread using a pre-ferment instead of a starter and it was delicious. So my question is what if any are the advantages of using a starter? (Other than I made mine from scratch over 4 years ago and it's now like a child to me so it would feel like murder if I didn't keep feeding it 😏)

Gluten free sourdough starter
So I've made sourdough and starter from single blend gluten free flours. But times are different at the moment and the only option I have for flour currently is a blend that has added xanthan gum. I've found an option for making starter with it, which intrigues me considering the gum. I'll keep you updated on how it goes
