Fermenting and Pickling sunchokes - one way to get rid of their gaseous effects
Every autumn I harvest lots of sunchokes. But, so far, I have not found a way to really enjoy eating them. The side effect - they cause bloating. After searching for different recipes I decided to try out fermenting and then pickling. i attach two recipes which I somehow try to adapt using the expertise of the authors and…

Recipes that use jam/jelly?
I have canned way too much strawberry jam, blueberry jam, apple jelly, apple butter, and apple chutney over the last couple of years. While I have given some away, I really need more ways to use them. About the only thing we do with the jams and jellies is serve them on toast. Please post some lunch and dinner recipes in…

Energy bars or bites? (Seeking recipe)
When I was growing up, there was a natural foods store near us that had "energy bars" in the bulk bin section. They were dark brown, and maybe had coconut in them? Probably dates, too, now that I think of it. I couldn't have been more than about 10, and I remember liking them. Anyway, I'd love to create a batch of healthy…

Cucumber Agua Fresca
I wanted to share a recipe I found on the NYT recipe site. You have to subscribe to see their recipes, so I’ll do my best to rephrase it here. It’s a great way to go through cucumbers and mint and really very refreshing. 2 English cucumbers 3 inches of peeled ginger zest and juice of 1 lime Chunk up the ginger and cucumber…

Do you have a favorite lemonade variation
Lemonade is a great summer time drink. I was making some yesterday and it got me curious about potential variations. Sometimes I add a little bit of lavender. I find lavender and lemon to be an amazing combination. Do you have a favorite variation?

How to make Granola without Oats
I really need a Granola recipe without Oats please. I did buy some Amaranth grain but now I cannot remember why? I have been eating protein in the morning but my Acupuncturist wants me to eat something warm in the morning. What do you eat in the morning? By the way eggs are not agreeing with me either.

Looking for ways to use canned apricots or plums
Was gifted many cans (commercial) of apricots and plums. Neither taste very appealing straight from the can. Any recommendations for how to use them in recipes? Don't think I have ever had apricots. We love fresh plums but had never had them canned until we tried these. Not sure what to do with either of them, but don't…

Coffee (filtering) Question
This is a bit odd but we use a camp style coffee pot and can't seem to find one that has both a good fitting lid on the pot and a basket that the lid fits well enough not to boil the grounds out of the top of the basket. The basket seem to be very short (shallow) now days with lids that just lightly sits on the top letting…

DIY Vegetable Oils or Substitutes
I have been thinking on this for quite some time. If you can no longer get the cooking oils that you are used to using, what would you use? I bet most of us can't grow olive trees, and I don't know if pressing oil seeds to make oil is actually practical, even if you can grow them. I think I would try my best to use animal…

Call out to creative cooks
I thought I'd post this just in case anyone has some recipes that could work. I've been approached to give cooking classes to someone with many food sensitivities. I welcome the challenge. I also appreciate any recipe ideas as the foods I have to stay away from are many - no nightshades, no raw living food dishes, no…

Chai Honey Mix
I made this blend this morning as a Christmas gift. Its really tasty! And that's coming from someone who doesn't drink chai. The recipe says to add it to hot water but I think it would be good in black tea, too. Great gift idea for the tea drinker on your list. In a fancy jar, maybe with a new mug and a honey dipper.

Homeopathic versus prescriptions
Believe it or not I have two friends who are taking more than 40 medications every day. They are on state provided (Medicaid). That is ridiculous so I am trying to get people onto Rhus Tox for their pain instead of prescription medicines. It kills my pain (hip) (head) or whatever quickly. Is this realistic do you think? Or…

Jerusalem artichokes harvested. What now?
Yesterday I harvested my Jerusalem artichokes. Three buckets full! I am going to cover them with sand for storing and keep them in a cool place. But what now? We love them fried or baked, but there are so many! @nksunshine27 some time ago you mentioned that you have a recipe for pickling Jerusalem artichokes. Have you…

Hoppin' John recipes?
Does anyone have a really good Hoppin' John recipe? I use onion and hot pepper in mine, but still find it a little bland. Just checked the old recipes, and it was basically just rice, black eyed peas and pork... not trying to make it red beans and rice, though!

Gin and Tonic for hot summers
I know that not all of us imbibe, bit the Gin and Tonic was invented to help sailors cope with the heat and malaria during hot summers. I buy commercial tonic water, made with quinine. I have been experimenting with legal, infused gin (botanicals steeped in vodka). A good summer combo is juniper, citrus zest and borage…

Have lots of parsley?
If, like me, your garden is going crazy right now and you have like 2 lbs a day of parsley a day, try this: Sweat down some onion and garlic, push to the side of the pan, add equal parts butter or olive oil and all purpose flour (like a tablespoon or two each) and just cook it until the flour smells cooked. Stir in milk…

American Recipes 1940s -1960s
Y'all know I love to eat! I think the era of the 40s-60s was really a classic era in American cooking, which is also very accessible to modern home cooks. Meats and veggies were still real, cut by a butcher or sold by a farmer. Convenience foods had come on the market and were used as shortcuts or optional ingredients -…

Raised bed garden questions?
How can I discourage an adult for punching holes. Intentional digging in the raised bed after it has all been planted? It is possible this person is mentally challenged. What are your favorite herb teas and tea blends?
With the price of coffee going through the roof, I am begrudgingly drinking more tea. So far, I have found that mixing herbs with regular black tea suits my tastes. But, chamomile and lemon grass alone is nice in the evenings. I've never been a tea guy. What herb combos would y'all suggest I try?

"Egg in a Hole" - what do you call it?
A quick and convenient breakfast for kids (or adults) is to cut a hole in the center of a slice of bread and place it on a hot, buttered pan - as always though, not too hot; don’t burn the butter. Crack an egg into the hole and either break the yolk or not. After it fries on one side, flip it over and let the other side…
