I work on a farm that grows shitake mushrooms. Like other mushrooms, are there constituents in shitake that can be extracted in an alcohol tincture that we don't get just from eating them?

Is anyone growing shitake? I have a couple of logs I inoculated last year and was wondering on a timeline for fruiting in real life?

Wendy, 6-12 months post inoculation is when you should see your first fruiting, after you fruit once, you should get 2-3 harvests per year for up to 8 years assuming you have taken proper care and storage of your logs :)
Ines, the issue with eating raw button mushrooms..those B vitamins and many other nutrients and compounds are not available to our bodies until they are properly heated, which is why common button mushrooms are not medicinal but shitake, maitake etc. are as their nutrition is more bioavailable.

Which specific "nutrients & compounds" do you mean? -
Cooking mushrooms causes them to lose water and shrink, yes? - so Each mushroom loses up to half its nutrients, particularly its water-soluble vitamin content (like the B's) when it is cooked, true?
If neither is correct, can you please give the reference, so we can all learn better? - Thank you :)

Just got my first shiitake inoculated log from a local herb farm. Can’t wait for it to start fruiting.

In a nutshell..mushrooms , not unlike leafy greens, have very tough cell walls..so unless heat is used to break this down the vitamins are NOT available to us. similar to the notion a vegan diet is not a healthy one because just because the greens have x nutritional content doesnt mean we can break down the cellulose and get to the nutrition ..just because water is reduced doesnt mean the nutrients within the veggie is lost..
