Pasteurizing nuts & spices?
I happened to be watching a sensational documentary celebrating French scientist contributions.
Of course, they had a piece on pasteurization. Milk, wine & juices were mentioned as well as nuts & spices. My thoughts are this...pasteurized milk destroys so much of the good in the milk. I cannot drink it, but can drink it raw because I can digest it because it is whole. This post is not about milk though, but about nuts & spices.
How on earth does pasteurization affect spices (thinking turmeric, etc.). It has to affect the effectiveness, healthwise, of those as well. How do we possibly get whole spices in this case if we live in a climate where we cannot grow these ourselves and if our govt. requires pasteurization? I know that many meats are irradiated "for our safety." I think that sometimes this protection is all about the big guy & their money, not really "for our protection," just theirs.
I am just curious if anyone has information about if/how pasteurization affects the health benefits of nuts & spices.
