Pumpkin Seed Recipes!

Even though we save some of our pumpkin seeds to replant for next year, we end up roasting the majority of them for a delicious snack :) Our favorite recipe is here: https://thrivemarket.com/blog/pumpkin-pie-roasted-pumpkin-seeds-recipe - and what is really great is that it uses raw honey and not sugar as a sweetener! Does anyone else have a great pumpkin seed recipe that they can share!?

    I love pumpkin seeds. If they are whole seeds fresh from the pumpkin, I usually soak them in salt water for a day, then roast in the oven until crispy and toss with a little oil and spices- curry or chili powder is good.

    I also buy shelled pumpkin seeds, and use to make dips/ cheese substitutes. Again, soak in salty water, but for 5-7 hours. Drain, blend with vinegar of choice, brine from olives or lacto-fermented vegetables, and olive oil. I don't measure, just add enough liquids to keep my blender moving, and taste as I go. I also add seasonings like herbs, garlic, pickled vegetables, or nutritional yeast. It is somewhat like a tangy ricotta.
