Tell me aboout Amaranth

I planted two varieties of Amaranth this year... mainly because someone sent me some seeds. I probably planted them too deep, as they have not come up yet. IF they do, how would y'all suggest I eat this plant? I know the seeds can be used as a grain, but I seem to recall someone saying the leaves were good as a green?

I'd probably use them the same way as I use kale. This looks good!

Very cool - thanks! I can't wait to try them!
Just like any other green. Steamed, boiled, grilled, stir-frys, fermented, salads. Closely related to Chenopodium species (Lamb's Quarters, Pigweed, Fat Hen, Goosefoot, Strawberry Blite).
Oh good - I love lamb's quarters!
