Finally a great crop of chokos/chayotes

It has been a goal of mine to grow a crop of chokos. People have said "girl if you can't grow chokos, you should give the gardening caper away" Not to be deterred, this season I gave them another crack and I have succeeded. Only 1 choko vine but gee bloody chokos everywhere!

Our favourite recipe is to poach chokos peeled and sliced in vegie stock, let that absorb, caramelize a little, then add a big dob of butter and season with s&p, love it.

Has anyone out there had experience with them after harvest eg, freezing, making pickles, relish etc. Any recipes would be greatly appreciated.
