Weird question: Has anyone ever made a rhubarb like pie using burdock stems?
Digging up a burdock that grow under the edge of pool for the ducks and saw how much the stems look like rhubarb. Has anyone ever used it in place of rhubarb in any dishes or anything else.

We have used younger raw roots chopped in a stir fry. They are fairly sweet & earthy. I have placed them in soups & broth as well.
The texture is a tad bit woody, but the flavor is really pleasant.
I don't think that it would make a very good pie.
