Air Fryer Experiment

My dear Idaho friends gifted me with an air fryer as I was packing to move. I know someone will ask - it's a 4.2 quart Ultrean brand, with a non-stick basket. And my mom and sister have access to several free produce boxes, which they have shared with me.

I was looking at all the wonderful produce I've been gifted with, and thought that I could make something yummy if I had some smoked sausage. I DID have a bag of frozen Italian meatballs.


I chunked up the yellow squash, green peppers and onions. Applied a generous amount of Italian seasoning and some salt. A light spray of olive oil, and cooked at 370 for 8 minutes. Stirred it up, threw in 8 frozen meatballs and cooked for 6 more minutes. Stirred again and added a handful of cherry tomatoes and turned the temp up to 400 for 5 more minutes.

I'd add some button mushrooms if I had them. Pretty good if I say so myself.

    My daughter wants one to take to college. I've not even looked at getting her one because I'm worried she'll be at home doing online college instead AND if she goes we're paying a lot of money for the meal plan,

    I've seen people posting on Facebook about a lid for my Instant Pot that turns it into an air fryer. Sounds interesting.

    I got an air fryer over the holidays and have been loving all the things I can do with it. Definitely one of those kitchen toys I didn't know I needed until I got it :)
