Suggestions for excess Lemon Balm?

Lemon balm and Catnip and Chamomile are the sleepy time tea each night. i look forward to growing it now that I see it is one of those plants that are wworry free to grow!

@Elizabeth Voss Thanks Elizabeth. I did try with the lemon balm, but I did have complete success in growing other new to me crops this year. I grew elecampane, purslane, plantain, Canadian crookneck squash, watermelon, and cantaloupe as brand new successes for me this year. I have a lot of uses for lemon balm and need to grow it successfully next year.

I made a lemon balm extract- gonna use it in cooking.

its in the mint family so it will have a tendency to take over. i dry it for use for later in tinctures or infusing oil to make salves
