    @silvertipgrizz very interesting video. I tend to make my dough, roll it out, add toppings and bake. If I think about it ahead of time I can let it rise. But sometimes I am a last minute person. Now I use a white sauce like a garlic parmesan or alfredo sauce. It is really good.

    I use whole grain flour, so it is all done by hand. I have tried a number of types of pizza dough recipes out of a pizza book that I own. Those recipes are fun to experiment with. I found one that is adequate risen or not. I have learned a lot by experimenting.

    Ultimately, I would like to make a Pompeii oven, which gets hot enough to cook those pizzas within 3 minutes, then you do bread & roasts as it cools down.

    If indoors, a soapstone pizza oven would be my choice.
