So question. If an unripe persimmon is bitter, is it "a bitter" ?

No, that is too astringent. If the bitter principle could be isolated from the astringency, then maybe. But, while unripe persimmon is certainly bitter, the astringency dries upper GI secretions... same with oak bark or some acorns.

@judsoncarroll4 I have a question. How do you distinguish between a moderate and mild bitter herb? The strong bitters are rather obvious. And, would be the carminative herbs be moderate or mild? Thank you.

Taste, mainly. If you taste Gentian or Barberry, it is like a face slapping bitter - very simulative! Dandelion and Burdock are the other side of the coin - mildly bitter and also supportive to the liver but not stimulative. Licorice is considered bitter/sweet. It works well with mild bitters, but counteracts strong bitters. Your tongue will tell you.
