Is there anything that I can do with an unripe pumpkin?
We are finally expecting our first hard freeze so I picked my last neck pumpkin. It weighs 3.5 pounds but isn't ripe; the skin is just starting to turn tan in places. Is there anything I can do with this? Can I use it like summer squash? I would probably peel it if I did. Can I pickle it? My kids would be just thrilled! Am I best served by just giving it to the chickens?
I do remember in the Little House books that Ma made an "apple" pie out of unripe pumpkin. I don't eat sweets, though, so I won't be trying that.

@Gail H I found this blog about someone who uses unripe pumpkins. I would think you could use them the same as summer squash.

The dehydrating sounds like a great idea but it sounds like they store for a long time.
I'd make pickles out of at least part of it justf or fun to see how it turned out.
I grew jarrahdale pumpkins this year and got one that was unripe. I learned that there are some recipes that call specifically for unripe pumpkins! It's part of a normal diet in some other cultures, apparently! You can also use it the same way you'd use a ripe pumpkin in things like soup. =)

I like unripe winter squash even better than summer squash. It's not as watery; it's very good battered and panfried.
