Rose hips
Several of my roses developed hips this year but how do I know when they are ready? Some have already started drying. I thought they would turn red and be ripe after the first freeze. Some did start a blush but that was it. These are domestics, mostly floribunda.

The rose hips that I've harvested have varied in color from light pink to deep red. They are usually a little soft, but not mushy.
In the past, I've found mine in the wild. This year I didn't harvest any.

Our Rosa Rugosa doesn't produce many hips that are edible. Maybe there's a trick to harvesting them? Thanks for bringing this up @seeker.nancy - Central Texas

I want to harvest rose hips but I haven't found any in the wild :(. God willing if we can get a house someday I want to plant roses to harvest from.

I've never harvested domestic hips before. Only wild ones. They are always bright red or deep orange red. They start to change quite early in the season but I wait until a frost so they will be sweeter.

O this reminds me I need to order rose hips for my tea ;)

I also harvest mine once the first frost is over and they are a nice orange to reddish color! Mid to late September where I am at is the usual time frame.
