I've never heard of fermented elderberry honey. Have you made it before, Denise? And if so how does it taste?

Denise Grant - ahhh! Yes, you must try that recipe by growforagecookferment! I made that exact recipe last winter, and it was incredible! It was delicious and such an immunity booster for me & my husband. It was so cool to hear it come alive - when opening the jar, making that fizzy sound, as ferments do! I just ran out of the syrup and now I'm planning to make a fermented turmeric honey. I'd love to see how yours turns out and anything new you learn!

I have used honey and elderberry@JennyT but did not ferment it. I laln to do that this week.
Anything fermented is good for my brain fog, plus its usually delicious

I made my first batches of fermented elderberry honey this year, from our first harvest of elderberries (I used them fresh), and it is WONDERFUL!!! When I feel something "coming on" (and my system HATES this dreary, damp chilly weather), I take a spoonful and, within a few hours, symptoms GONE. Flavor's not too bad, either. If I need a bigger bang for the buck, I use the fermented elderberries plus garlic. Tastes like a punch in the mouth of garlic with some sweet undertones - not the best - but I tell myself that that pungent flavor is 'my assurance of quality' and it goes down pretty easily. I plan to never be without my fermented elderberry honey again! I am a beleiver!

@Suburban Pioneer Love the addition of Garlic!~ That would be good for that persistent cold.

This sounds wonderful. I wish I wasn't allergic to bees. I need a better supply of honey for all my goodies.

I am starting to use a lot more honey for fermenting fruits. I have a friends that will trade me items for honey.

I am looking forward to my young elderberry shrubs to begin to produce this year so that in another, recipes like this will be in my pantry!
I purchased a gummy elderberry supplement for my daughter and laughed to myself when I read how "much" elderberry was actully in 3 gummies - 3 berries???
