All completely different and I especially like the entrée using the organ meats. That's one thing I'm having a hard time with, how to fix organ meats so that my family, myself included, will eat it. Both my husband and I did not grow up eating organ meats but I know now how beneficial they are. So I'm trying to learn ways to cook them.

@JennyT Turkey pie is where my mom used organ meats. It was so very tasty and you don't have to really see any of those organ meats if you don't want to.
I have no issues with most of those. The gizzard is actually very good meat.

Big fan of using the whole carcass on any animal. So many people just buy the breasts of a chicken or certain cuts of beef or pork. If we are going to be carnivores we should honour the life of the animal by using all its parts. And how much healthier! All that lovely bone broth!
I think I enjoy the After meals from a Christmas dinner more than the actual dinner. This year hubby had a couple of meals of hot turkey sandwiches and then we had a delicious turkey pot pie. The carcass made several bowls of turkey noodle soup. A friend was making a turkey curry with some of her leftovers.
The pie is a great place to hide the organ meats. I generally simmer them (along with the neck) in water with a splash of white wine and some herbs and use the broth in the making of the gravy and then chop up the meats to go into other dishes.

I like to eat liver regardless if chicken, beef or pig. But the family is not into it.
