At Wilderness Awareness School, in Washington state, we often made tea from Western Red Cedar boughs. High in viatmin C, and tasty, too.

I haven't really used the boughs or needles, except in making wine. I've flavored smoke with them though - really good on trout! Also, always a nice addition to a camp bed.
