I thought this would be fun to share since I’ve asked about salt pork and wild onions on this forum. I made a quick lunch for the kids today from leftovers, wild onion, and chickweed.
I fried lots of chopped wild onions in salt pork and threw in leftover cooked pork. I added cooked noodles and seasoned it with sesame oil and oyster sauce, then added loads of chopped chickweed once it had cooled. My kids loved it even though they are not fans of onion or lettuce-y vegetables. Kind of a surprise. 😊

I was just noticing the garlic mustard is out, and some of my herbs are up- I might have to do my own version and report back.
