Getting Creative and Using All the Garden Vegetables | Creamed Greens and Potatoes
I have to admit... I never thought of mixing greens and potatoes.
I'm not sure why this thought has never come to me, because it happens to be AH-MAZING!
This year, I, unfortunately, do not have an abundance of any one thing and therefore am unable to preserve my harvest (like the whole reason why I garden).
Needless to say, I've been getting creative with what I've been doing with my harvest.
Here are a few recent threads:
Preserving OLD, Freezer burned bread
Okay, now that we got that out of the way...
Here is what I did....
Sauteed potatoes (in bacon gold), added mushrooms, then onions...then garlic...
Then greens (in this case chard, spinach, and kale) and sauted for a minute or two...
Then, my homemade vegetable stock. I let it cook down almost completely so everything was perfectly cooked.
Next, the MAGIC happened and I added some butter and cream!
And again, let it go for several minutes so it thickens nicely!
Of course, there is salt and pepper, bacon,...sometimes chili flakes...or parmesan...or any number of things i feel like adding! But, this is the basic and it's sooooo good!
Why have I never thought of combining potatoes and greens?! So YUM!

Here is a terrible photo of my current garden space. It's a first-year garden for me...and the reason why I think nothing is as abundant as it should be.
Not pictured, all the landscaping and containers with herbs around the house!

When I saw the title of the discussion I was thinking mashed potatoes and greens, like colcannon. I've seen it made with other greens besides cabbage or kale.
But yours looks very good, too. Potatoes and greens are a good combo no matter how you do it.

I have been doing potatoes and green in various combinations since I first learned about colcannon a couple of years ago. The combination has so many possibilities. This evenings dinner was some potatoes we had to pull out of the garden. I added some carrots and cooked it down well, then I added the last of a frozen bag of riced cauliflower. Onions and some thyme and butter. Dinner

You inspired me to give this a try today. I didn't have any cream on hand, but I found out that homemade yogurt works too! Really yummy, besides being quick and easy and using up some bits that needed using up. Thanks! (Still planning to try it with cream too😋)

Awesome! Glad you enjoyed it. That's what's so great about it, you could probably put a bunch of bits that need using!
