Most commonly, this is done with beef bones, usually shanks, but any ret meat critter with big enough bones will work. You cut the bones into portions that allow the marrow to be scooped out once cooked. Soak the bones 2 days or so in a few changes of salt water, then roast them. Serve on bread, like butter, with salt, pepper and whatever herbs you like. MIGHTY good!
