Pumpkins after the holiday
Never quite thought about this.
I think I'll try cooking and freezing some for fillers in various meals.

Nice! I use pumpkin as a vegetable. It's not my favorite, but I do use it. It makes a good puree for pumpkin bread. It also makes a good souffle.

I like it in a curry, and have had some pumpkin ravioli that was really good (from Aldi's). I can do pumpkin or squash soup, but it's not a favorite.
Funny thing is that I do not like pumpkin pie.

Last year for Thanksgiving I decided to make a pumpkin pie. Yes, it was out of a can but I was able to do it. The pumpkin pie was delicious and while it lasted me awhile I also did one for Christmas. Yummy and I had leftovers too.

Pumpkin pie. pudding, cookies, cake, and even pumpkin leather.
Also great for farm animals
And don't forget the seeds.

Did you know that you can make pumpkin fries? We are going to try it with buttercup squash because all of our pumpkin is now in the freezer.

The raw shelled seeds help calm teen growing pains. My brother was told to eat those by the handful when his feet started growing quickly and were giving him great amounts of pain. It worked well.

Harvested about 30 pumpkins from my garden. Have given some away and have 5 left that weigh 15 lbs. or more and a few smaller ones. All I can think of is pies and bread. Not sure of the vegetable idea. It does not sound like it tastes good.

Great ideas. I just need to find a way to get my husband started eating them as more than pumpkin pie. He is not a fan of most squash. Plus I learned why my pumpkins did not survive storing in the cold area under my bed last year. LOL

Pumpkin fries sound so good. When I told my husband, he just shook his head.

Wish I would have seen this earlier. Last week I was at a store where sure enough there was a huge box of white pumpkins outside the front door with a sign that said free, take as many as you want. I'd always thought decorative pumpkins weren't so I didn't take any.

Pumpkin takes on italian flavors very well. I add pumpkin to my pasta sauce, i make an italian pumpkin hamburger casserole.

We found that the fries we made with buttercup squash were quite similar to sweet potato fries.

I grew white pumpkins one year. They are long season, ours is short, but somehow, I barely got a couple close enough to mature to pick. They were still a bit blue in color.
I think they are cool.

There really is a regional difference in how folks use Pumkin or even view it.
My friends in Findland only use it for anumal feed. In Oz we use it all year round roasted and in many dishes and salads. We are not a country that makes Pumpkin Pies/Desserts with it.

I wish leftover pumpkins would go on sale here, but they disappear from stores and farm stands quickly around Halloween. I think the farmers know there's little demand after October, so they don't grow enough to have leftovers.
I actually had trouble getting a large pumpkin for a jack o lantern because I waited until a week before Halloween, and most large ones had already been sold by then.
I'm surprised more people don't cook raw pumpkins for pie or other food uses. No need to buy the expensive canned stuff!

People do. Its a region specific thing really. Many farmers if they cant sell to public will send them on to animal feed. However if a farmer is contracted to a supermarket chain, it can mean that a heap of their food rots in the field if its been over abundant in the season. As they cant legally sell it on anywhere else.
Had that nonsense back in Australia. thousands of kilos of bananas were being thrown out
