Pressure canning chicken

Just found this article on pressure canning chicken. Will definitely be on the project list before prices get too high.

    I will say that in the recipe in this article, she removed the weight when the temperature drops back down to 200 degrees. First there is no temperature gauge on the canner so you really don't know when it comes back to 200 degrees. And the instructions say to let it drop down to zero on the dial. All American canners have both the dial gauge and the weight. I would never just take the weight off to vent my canner. Losing pressure that fast can cause your jars to have blow outs. Or the loss of fluids and such blowing from the jar (ruining the seal) as a result of the sudden pressure change.
