Easy Fresh Cheese Recipe

This is such an easy recipe, requiring only an instant pot, milk, and kefir. The result tastes like yogurt with a thick fresh cheese texture- tangier than ricotta. I usually need a gallon of milk to make cheese and this uses only a half gallon.
