Blue garlic
This is the second time I've added store bought organic garlic to a ferment I'm making and the garlic turns blue. 😡 Obviously even though the garlic is "organic" it's been treated with something. Makes me so mad because I feel now that there is an organic certification it means the definition of organic can manipulated from what I as a consumer assume it to be.
Does anyone know what is turning the garlic blue? Is the ferment still usable. Not sure I want to eat blue garlic even if it's considered harmless but wondering if I should throw out the whole jar.

@annbeck62 From what I understand, garlic turning blue is just a chemical reaction of the garlic & whatever is in your ferment. I think that discussion was in relation to fire cider.
I don't remember all the stuff behind it, but it is safe. I saw a discussion on this a few months ago on an herbalist's post somewhere & they said not to be concerned.
I hope this eases your fears.

Interesting. I've used garlic in my fire cider and never seen it turn blue. Unless I just chopped it too fine.

@marjstratton I also use it in my fire cider without issue and have added to other ferments without it going day glow blue on me. That's why I thought it had been treated with sprout retardant or something. Good to know it's safe to eat although not sure anyone actually will eat it in my house.

Yes, I agree that I would think twice about consuming blue garlic.

According to https://www.makesauerkraut.com/fermented-garlic-paste/ "The color change is caused by a reaction between enzymes and sulfur-containing amino acids in the garlic (the same enzymes are responsible for garlic’s flavor). When these enzymes are activated by mild acid, they produce blue and green pigments. " To avoid the blue or green color use fresh garlic.
I make jars of fermented garlic cloves. I eat them plain and with veggies.
