salsify versus scorzonera?

Who has tried eating these... what were your thoughts and what is the difference?

I've only once had salsify but now that you have pointed out that there are different species, it must have been scorzonera as the roots were black, not white. Can't say I was impressed. I thought they were a bit woody. Couldn't see how they had any oyster flavour. But they were store bought so maybe homegrown would have a better flavour. They didn't impress me enough to want to grow them myself.

Scorzonera aka Black Salsify is Scorzonera hispanica. Salsify is Tragopogon porrifolius. We have a species of Tragopogon (T. pratensis) here that is a highly invasive weed. Its common name is Meadow Salsify. I have heard that it is edible but there isn't much root to it when you pull it up. Very thin and pencil like.
