Have lots of parsley?

If, like me, your garden is going crazy right now and you have like 2 lbs a day of parsley a day, try this: Sweat down some onion and garlic, push to the side of the pan, add equal parts butter or olive oil and all purpose flour (like a tablespoon or two each) and just cook it until the flour smells cooked. Stir in milk and make a thick sauce. add all that parsley any other herbs you like, salt and pepper. Serve over pasta with lots of parm. Shrimp, meat and mushrooms are all good additions.

Sounds yummy, Judson. But I only have two parsley plants this year that regrew from last year. I couldn't find any starts this year. Last year was different. I had a bumper crop. I will try and keep this in mind if I am gifted any parsley.

That sounds great!
What I like to do when I have too much parsley is to chop it up then freeze it in a little water in an ice cube tray, it is super easy then to drop into soup or stew.

That sounds delicious! What a great idea. Sometimes even just one healthy parsley plant can mean way too much parsley!

@judsoncarroll4 I have never grown parsley. Is it easy to grow. Since I have had problems with my garden this year I need to add some more plants to it.

I always keep one cup portions in my freezer to throw into smoothies or soups. It would be good dehydrated.

Sounds yummy and good for you. Kinda glad I did not plant parsley this year as we have been so hot and dry many things bolted pretty quickly. Last time I planted (which was also my first time) I did WAY to much. Was giving it away regularly as there was so much I couldn't make enough room for it all and it just kept going even after it has a light layer of snow and ice on it, it just kept going.

I was wondering if it was hot for you in Alaska, as well as northern Canada. Last week the Northwest Territories had 12 out of the 20 highest temps for the day across Canada. This included several record highs, too. 31.8 C (89.2 F) in Inuvik (above the Arctic Circle) last Monday!
Here is it cooler than normal and very wet. My parsley is loving it, though.

Parsley is so often just viewed as a garnish, but it's really a nutritional powerhouse with some versatile uses! Love that you shared this, @judsoncarroll4 !

@torey Yes, it has been very hot here and extremely dry. We have been seeing 80 to 90F regularly. Not record setting but still very hot. Plus we have had extremely dry weather as well. Forecast is calling for showers this week. Hopefully they will be widespread and not just little sprinkles here and there.

I pretty much used parsley and celery leaves together, if not interchangeably. Definitely worth a try

I guess I should have been more specific about the rain. It has not stopped yet. We have now gotten so much rivers and creeks are at flood stage throughout our whole borough. (Same as county and province.) Just looked at forecast and there are two days out of the next ten that might not have rain.
