I would never have thought to add grapefruit to a black bean soup. Very interesting.

Switching from canned beans to dried beans is definitely cheaper. I've been doing this for much of the past year. Now that I have a pressure cooker, it's faster to make beans from scratch. Soak a few hours, then pressure cook about 30 minutes.
It's interesting to compare older cookbooks and see how the nature of "what is cheap and available" has changed. In WW2, there was a push toward "variety meats", the parts of the animal that were not the usual cuts. But today, it's difficult to find those variety meats, and if you succeed, they'll probably be priced as expensive specialty items.
