Hoppin' John recipes?

Does anyone have a really good Hoppin' John recipe? I use onion and hot pepper in mine, but still find it a little bland. Just checked the old recipes, and it was basically just rice, black eyed peas and pork... not trying to make it red beans and rice, though!

This is probably a silly question, but does it usually have okra in it, @judsoncarroll4?

Being a Yankee with no knowledge of such dishes, I ask because I thought I saw a recipe long ago and it had okra as an ingredient. And sorry no, I don't recall where I saw the recipe.😕

I have never had Hoppin' John. I found an old Fanny Farmer Cookbook at Goodwill today. No recipe in there for it.

I have not heard of Hoppin' John before. I did some internet searching because I was curious. I looked at 2 recipes. They both have bell pepper and cajun seasoning. Would those items be typical in this dish? It sounds like a fun dish to try. Thank you for bringing it to my attention. @judsoncarroll4 is it going to be in your cookbook?

I like peppers in mine. But, Hoppin' John originated in Charleston, SC so I don't think the Cajun spices would have been int he original. It was sold by a one-legged, black street vendor named John. Cayenne would have been more common than black pepper at the time. So, that fits.

Maybe add a little liquid smoke &/or smoked paprika.
