Leftover cornbread recipe

I experimented with leftover cornbread from Thanksgiving and used it as the topping for a crumble. I turned the cornbread into crumbs, mine was soft enough to accomplish this by hand. The crumble recipe I found called for flour and oatmeal. I replaced both with the cornbread crumbs, added a generous amount of cinnamon and vanilla then followed the recipe. It was incredible. Everyone had seconds :)

@annbeck62 that sound fun. I want to give it a try. We never have leftover cornbread. Maybe I'm just not making enough to begin with each time.
