Great article on making potted meat

    Interesting! I tend to think of freezing or canning when preserving meat.

    I pressure-cooked some chicken breasts a month or so ago and it worked very well, and the cost of four pints of canned chicken was about a dollar less than buying the same amount of canned meat.

    Unfortunately, one of the jars didn't seal properly, and I didn't notice it and move it to the refrigerator. So I had to throw out a quarter of the meat, which more than offset the savings.

    My grandmother used to pot sausage. She would pack it tightly in the jars and then top it all off with lard. It was VERY good! A friend used to make heavily spiced potted deer mead that was delicious... and, of course, you can't beat duck confit!

    Potted meat was found in our pantry but I didn't pay much attention to it and have never tried it. The potted meat was in small cans. I guess deviled ham is something I have had before. Thanks for bring it up as a topic. I read some of the article and it was very interesting!
