Pancakes Are More Interesting Than I knew

I love reading about the history of food. Here's one on the lowly pancake.

Great post for the season - yesterday being Shrove Tuesday in England... they traditionally make pancakes and have pancake flipping and racing events!

Wow! That's interesting. I'm not much of a pancake person but I do like latkes and crepes (and waffles even though they aren't technically pancakes). 😀

Interesting article. I used to be able to flip pancakes, but not so much anymore and certainly not while running a race!

BTW, maple syrup has gotten crazy expensive... and while you can tap several trees to make your own syrup, black strap molasses is still cheap. THhre are few things better than molasses and butter on pancakes with bacon or spicy pork sausage!

Black strap molasses is a good source of iron, too. Even WebMD lists some nice benefits.

It also doesn't spike blood sugar. SO, it is a good alternative to sugar for folks who worry about sugar. I don't. I just love a hot biscuit made with lard and buttermilk and a big glass of milk!

I love making pancakes. I don't enjoy sweet/sticky things though so mine are covered with just butter. I do wish that I could get better at crepes though. I had a friend introduce me to a recipe that he learned when he lived in Russia that is basically ground beef, onion, garlic, and seasonings wrapped in a crepe and then pan fried.

That sounds good! I've not tried to make crepes, but an old friend used to do them on a camp stove while hunting elk in Colorado, so I think I should be able to do it in the kitchen. He's passed away now, but I remember the day he brought his camp stove to work and made breakfast for us all.

Pancakes were the first thing I learned how to cook! I usually use maple syrup or eat them plain (with chocolate chips inside), but I will have to try the molasses.
