Three easy knots I suggest learning: the bowline, the McCarthy hitch, and the trucker's hitch.
I learned them for camping and use them frequently to put up tents, but they would also be useful anywhere that you need a line that you can easily adjust under tension to hold something up or off.
There are good videos on YouTube showly exactly how to tie these three knots.

I have fallen a little behind on my knot tying videos, but I just learned a new one that I think is pretty cool. This one will probably be easier to learn using this pic than to see it tied. ENJOY!

Learned a lot of knots as a girl scout. I've forgotten a lot of them too. Keep learning and relearning various knots. Yes, they are fun to play with.
