Fried dandelion buds
Another recipe from my spring workshop. Fried dandelion buds. They were absolutely delicious. We collected a handful of dandelion closed buds. I washed them and patted dry. Then we roasted a chopped onion in butter, added the buds to the frying pan and a bit of herbal salt and let them fry for a few minutes until they started changing color. We are them like that, just to experience the full flavor. They tasted a bit like fried saffron milk cap mushrooms fried in butter. My favorite mushrooms! One could have the fried buds as a side dish, but they are too good to be a side dish 😊.

Our dandelions aren't very prolific yet. Been wanting to harvest some but I think the deer are beating me to most of them.
