Lamb's Quarters; love this plant. Great food for all creatures. I prefer it to spinach.
This “weed” shouldn’t be overlooked as it has a higher mineral and vitamin content than most other garden vegetables (including spinach and beet greens), particularly high in calcium and potassium. Its high in Vitamin C, B-complex and Vitamin A precursors. And a good amount of fibre.
I agree with you on soups. I love all types. Not a fan of the fine dice in many French soups. I like mine more on the rustic style with larger chunks.

Absolutely! I can't believe people try to eradicate it. This one is absolutely one of the best wild edibles. A friend of mine was very run down/anemic after some issues with her pregnancy. I suggested nettles, lambs quarters and a few other wild greens and she made a dramatic recovery.
