I use  actual pumpkin for cooking.  I normally make pies and pumpkin rolls.  I don't can it but I do freeze it.  I plan to can some if I can fit this in during apple season.

I buy fresh pumpkin as my growing space is not big enough for pumpkin. Mainly using Them for soup or baked pumpkins. Canned some in the past but did not liked it.

I don't can my pumpkin, or other squash.  We use it as a vegetable as well as a pie filling, so i freeze it.  I usually cube it, peeling off the skin, and then steam or blanch it, bag it in 1 or 2 cup portions and freeze.  I do the same with other squash like zucchini, spaghetti squash, acorn, etc.  Squash in stew or soup in our cold winters sure does come in handy.

We usually end up storing them whole in the basement.  I tend to bake them a couple at a time then freeze or refrigerate what I don't use for later. We seldom have much left though.  Winter squash is one of my favorite things.
