Seeds to trade with Canadian friends ...
What can you tell me about Polish Wheat? What was your source for it and how is it different from other wheats (what makes it stand out)? This seed is the most intriguing to me.

I’m on the west coast but I grew the wheat quite easily a few years ago while living in the prairies ... a zone 3 I believe. I’ve yet to grind it up and use it as flour just because I’ve not yet grown enough of it’s that’ll be next year! ? My original seeds came from a seed company in Manitoba so would imagine they do just fine. They turn a from green to a neat sort of bluish black then golden as they ripen and they get a neat sort of kink in their stalk ... I don’t know if that’s all wheat but I thought it was interesting!

I have found that Heritage Harvest Seeds in Manitoba is excellent for heritage and very hardy grains (any seeds really). They have really diverse genetics too. Try out their website for super hardy veggies and herbs and "old time" flowers too.

Be cautious about that seed company. One thing to be aware of is that they do not have quality control. You don't always get what they advertise. I applied to be a grower at their start, but had concerns over their lack of this, so decided not to proceed.
I have since talked with more than one gardener that became disappointed over what they grew from there. They grew a veggie one year...the next year, when they bought the same seed, it grew something totally different, but still in the same family. It was as I had suspected.
If you don't mind surprises, they are expensive, but would fulfill this desire. If you want something to be consistent, matching their description in the catalogue, you need to be cautious.
Considering that I want to be sure of what I am growing, I avoid their seed.
As for ancient grains, there are a few farmers in SK that grow and sell heritage grains. I know that there are also sources in BC & ON. It would be worth doing a search to see what they have and ask them specific questions as to their experience with Polish wheat. I can't remember the farm names right now or I would post them. :(
