Jerusalem Artichokes-Recipes???

Anyone have any recipes for Jerusalem Artichokes? I use them the same as potatoes- with roasts, in soups and stews. I'd like to try something new.

    Hi I raise them and have stir-fried them, or just sliced and fried them also i found that eaten raw they are crunchy like water chestnuts so started putting in my spinach dip instead of water chestnuts. I've also mashed them mixed with garlic and butter. hope that helps. it seems like i'm the only one in my family that likes to eat them and i have lots growing!

    i cleaned my desk and have been away for hunting but im back now i'm going to try several different ways. one will be to scrub them really good and pickle them like i do my beets they are kinds sweet the other way is sweet and spicy and another is like bread and butter pickles if you want the recipes let me know and ill copy them down and send thanks
