Homemade pectin from apples
I recently came across a recipe for homemade pectin made from apples and wondered if anyone has used this here for jams/jellies, etc... I wanted to try this with some of our crop this year and I am curious how it compares to store bought (since I would rather have a homemade version!) Thanks :)

What is the recipe? I've always wanted to do this. Ha, ha, it's on my bucket list! I've heard that crab apples have the highest amount of pectin...

Love this. We get over 40 pounds of apples every year and I'm always looking for more ways to use the leftover bits besides composting. We've tried baked apple skins (delish) and making apple simple syrup (works well), but I'm excited to add this to the rotation! Thanks for sharing the idea.

Thanks @chimboodle04 oh I want to do this! A friend and I have been freeze drying our apples (she has the apples, I have the drier, and we have a ton of fun working together) and I just tossed a big bucket of the scraps intot he compost pile.
But you know what? I am in the midst of hosting this little online Summit... 😀 so realistically I might have to wait until next years crop. But thanks for posting! It's in my bucket list.

@chimboodle04 I make my own homemade pectin using small Granny Smith apples and for one batch this Summer I included wild crabapples. I have used it to make jellies with Goldenrod; Dandelion and Violet Blossoms; Purple Deadnettle, Dandelion, and Violet Blossoms; Winged Sumac; Dwarf Sumac; and more. The largest batch that I have made with it is 8 half pint jars. It jells nicely but the more liquid that you have the longer that needs to cook.

Not quite ripe apples have the highest amount of pectin.

I use the small apples that won’t have time to ripen on the tree to make pectin and almost all of it gets used with rose hips. Apple rose jelly is a family favorite. I use this recipe.

@Marjory Wildcraft @bejer19 @chimboodle04 I use my apple scraps for making apple cider vinegar. the pectin recipe i have is from ortho books 12 months harvest. they take "june" apples they are small early tart hard apples, you can also use crabapples, they wash core and thinly slice unpeeled apples into a kettle for each pound of fruit add 2 c water.cover boil slowly for 15 min strain through a colander lined with cheesecloth and reserve juice,return apple pulp to kettle add same amount of water you originally used. cook again for 15 min.let stand 10 min.then res-strain through cheesecloth.squeeze well to get all juice out combine two batches of juice. if you began with 1 lbs. of apples you should have 1 quart of liquid pectin. refig till ready to use. for longer storage heat to a boil, pour into hot sterilized jars and seal. it says to use this pectin, mix 2c. pectin with 2c. fruit pulp and 2c. sugar. boil slowly until reaches 221 degrees, the jelling point at sea level
