Greek Spanakopita: Phyllo, spinach and feta

@silvertipgrizz I have never had rice in spanakopita before but as I am a rice fan this looks great. I am thinking stinging nettles instead of the spinach and maybe some other wild spring green instead of the parsley. YUM!!!

I was very lucky to have a good Greek restaurant in town when I grew up - the folks were straight from Greece and thee food was authentic and great! People are surprised that coming from such a very small town, I grew up with so many ethnic foods - but we had Italian, German, Swiss, Jewish, Polish, French and Mexican folks who lived there, many of whom had restaurants and all of whom were hospitable and enjoyed sharing meals and recipes. But, it was a unique little resort town in the Appalachians, that was very much a vacation spot for the ultra wealthy in the guided age - grand hotels and ski slopes. Most of that was gone by the time I was a kid, but many families who came there during that era fell in love with the area and stayed.
