Help need ideas on what I can do with a box of limes!
I was given a box of limes, we're talking a big box!
I have dried, put in oil, vinegar
Now what?

My suggestions:
Try making lime honey. Make some into pie. Juice some & put that juice into ice cube trays for future use in pie, limeade, etc. I can't remember what the measurement of each ice cube cup might be...2 Tbsp? Rasp & dry peels for cake decoration, in cookies or cakes, tea, etc.
Could you powder some peel? Maybe it could be used in icing/cake batters to color it? I'm not sure about that, but I try various natural things to color icings. Cakes, well, I haven't done much experimenting with doing that yet.

If you are interested in preserving more of them, try using salt.
lemons and limes will, should be fine to use).

You can freeze the juice and freeze the peels, the peels you can then put into soups, stews, sauces, etc.

Limecello.... zest them if you still can, steep in vodka, mix in simple syrup. If they are really dry, instead of using plain water in the simple syrup, juice some of the limes, strain out the pulp (and press it) to make a sweet lime-aide to ad to the infused voka

I think I would juice the remaining limes and freeze it in ice cube trays to add to iced tea or water later on. Also the peels can be put in vinegar to make homemade cleaners and you can freeze them for later to make more. I have done it with oranges so I assume it could work with limes as well. I wonder if you could possibly distill some lime oil from them as well?

Lime-Ginger Shrub
This can prevent scurvy. Mix with soda water. It can also be used as a general mixer for drinks.
Ingredients.
- 4 lbs Limes
- 1 lb sugar
- Ginger Root
- 1L apple cider (or white wine vinegar)
Cut the limes into 1/4ths or 1/8ths. Chop the ginger into slices–leave the skin on.
Place the lime and ginger slices in a non-reactive sealed container, then cover them with the sugar and toss to coat evenly. Leave in on the counter for a day so the fruit can release its juices.
Add vinegar to the sugar-fruit mixture, and stir. Place the whole mixture into the fridge for at least two weeks, stirring every few days. The fruit should be submerged.
After two weeks strain out the fruit solids. Return the syrup to the fridge and let rest for at least another 2 weeks before serving.
Yup--a month. But this is delicious and filled with vitamin C.
Lime Sugar--zest limes. Mix zest with sugar. Makes a flavorful lime sugar for baking, drinks, baking, and more drinks.

Oh... how I wish I'd seen this thread a month ago when I too was given a HUGE box of limes. We made a big thing of limeade... I saw the salt method but didn't feel we would use the final product. Sadly, most of the remainder went to the compost pile. 😥 I'm saving this recipe for Lime-Ginger Shrub... thank you for posting it!

This is what I do. I freeze one lime's worth in each square of one of those silicone ice cube trays, then put them in freezer bags once they're frozen.
.... and, even if they're Persian limes, you can use them to make key lime pie. Yum!

I'd try to make some lime curd with them. I love lemon curd, and I've never had lime curd, so I'd experiment with that.

I freeze my citrus juices. If you're sure it's organic, you can use a peeling knife to shave thin strips which you can dry and use for flavoring in smoothies. It's sort of like adding essential oil for flavor but way cheaper.

I love lime!! I juice and freeze using all year. I take the peel after I’ve juice, thinly slice and dehydrate. Using a high power vita mixer blender I powder the rinds to make flavored sugar or salt. The powder I also add to my muffins or cookies also. I do make essential oil body scrubs adding the powder.

@Merin Porter I like the idea of silicon ice-cube tray and will get one for my dad, he had issues getting the frozen juice out of the regular trays.

Lime juice is used in many Asian dishes, so check Asian cookbooks. For example, squeezed lime juice on pad thai is excellent.
I've recently started cooking more Asian dishes from Thai, Vietnamese, and Chinese Sichuan cookbooks.

I've had them for two years, and they've held up well. The only thing I wish was a little different is that the lids do not really "hold onto" the ice cube trays, so you kind of have to be careful when you move them. But they do just fine as a place to set one ice cube tray on top of another, which I think is probably why they're even included in the set.

I just made lime and soursop kombuchas. They surprised me when I tried one - kind of tastes like a sparkling limeade. I also recently made a lime pie (not key lime just lime). It was really good. You could make either or both of those.

I never thought about preserving and other uses for lemons and limes I purchased, but often didn't use all of them. Great ideas and thanks for sharing-that is what this sit does for me-learn and learn and share. :)

You can just put them whole in the freezer. When you want to use one, microwave for 15 seconds and it's just like fresh. Works with lemons too.
