Sourdough...
I have been experimenting with turning regular recipes into sourdough.
The other day I tried a recipe I saw on YouTube - sourdough brownies...they were OK - but I am super particular about my brownies too so I was judging harshly there.
Today I tried a no flour sourdough oatmeal cookie...AWESOME!!! I even nixed all of the sugar in the recipe and added a sprinkle of stevia instead. I do have to say that I used the little packages of Quaker Oats apple and spice instant oatmeal so there was some sugar in the recipe due to that.
I have a batch of sourdough crescent rolls waiting to be baked but they are still rising.

I add dried cherries to my sourdough bread. It makes a great breakfast bread.
@shllnzl What a great idea! I found with adding the raisins to the cookies the sweetness that they had was enough to sweeten the whole cookie. So good, you know?
@monica197 I use the chewy dried tart cherries from Costco and add them to both white and light rye sourdough bread. It is my favorite breakfast food, especially with cream cheese. I do add sugar and a small amount of yeast to the bread recipes, but the result is not over sweet.
Full disclosure: I bake my bread in a bread machine and I also do not discard starter. I just refresh both white and rye starter, and consume enough in bread making that I am not overrun with too much starter.

I've made waffles and cinnamon rolls and both were delicious.
My 17 year old son is the expert baker. His sourdough culture is so good, my 21 year old son uses it to ferment his honey mead. Makes it taste like fairy eone and field full of flowers

@monica197 yes you can adjust a recipe - place 1 C starter win a large bowl with 2/3 of the flour the recipe calls for. Add all the water (or other liquid). It will be a batter at this point not a dough. Cover and set aside 14-16 hours, it will get bubbly and light. Add all remaining ingredients but not yeast or any baking soda. Add remaining flour and mix/knead to make a soft dough. Form according to original recipe and let rise (may take longer than yeast) Then bake and cool as per the recipe.

@monica197 Yes, I do keep my starter in the refrigerator. I usually bring it out the day before I plan to bake, allowing it to finish digesting before I feed it again. I use it about 4 hours after the last feeding.
I have been taking mine out the morning of, but maybe the night before is better - I will do the next time.
monica197 ooh yum, I'll be trying that no-flour sourdough oatmeal cookie recipe you posted! Thank you for sharing. I love adding sourdough starter to everything! I've made the best tortillas with it, sourdough muffins and pancakes and crackers. Amazing and delicious!

Sourdough biscuits are awesome- and sourdough cornbread is good too. Also i throw starter in muffins sometimes just so i get to use it. They turn out good too😊
nicksamanda11 Sourdough cornbread? My mouth is watering! Do you have a recommended recipe that you wouldn't mind sharing? No worries if you'd have to dig for it or anything like that; I wouldn't want to cause a hassle. =)
I think you can use sourdough discard to replace the flour/liquid in almost any recipe. My most recent foray into using discard was blueberry sourdough scones. I have a brownie recipe that I am going to try. I also found a cookbook "Sourdough Every Day" by Hannah Dela Cruz. She has a lot of discard recipes and that was the reason I bought the cookbook in the first place. Because you can never have too many cookbooks!
I love my sourdough but 5he kids will only eat treats that are 50/50 sourdough and yeast.

This all sounds so good, it has been years since making sour dough anything. Guess it is time to start again.
