Does anyone do apple cheese or apple leather
We have so many apples this year that I would like to make some hard apple cheese. This is how my mother called it. I know she peeled apples, boiled them with some sugar for a very long time, then dried it, but I do not remember the whole procedure. Does anybody do it? I would be grateful for a recipe.

I do apple leather.
I just cook apples to a applesauce consistancy and blend. Place in a dehrdrator or oven (very low or just pilot light). When its leathery, its done.
I sometimes add lemon, cinnamon or another fruit just to jazz it up

This looks very interesting. May have to see if I can get some apples and try this sometime. Might be middle of winter or later before I get the chance, but might be worth it.

I used to do apple leather, but never heard of Apple cheese. Sounds interesting. I will have a plethora of both apples and pears. May have to give this a try.

I've never heard of apple cheese either.
I've accidently made apple leather when I spilled some apple butter on the towel and it dried out there unseen. :-)

@monica197 exactly. It looked like this! I just have to figure out proportions, but I can judge by taste how much sugar, cinnamon... I remember that it kept for ages. One could cut a thin slice instead and eat it instead of chocolate or bonbons.

@Monek Marie I guess apple leather is similar, but thinner.

@jowitt.europe Yes it is simular. Its great as a snacks for kids since its easy to handle. I would think the apple cheese would be faster since you can probably do more at one time.

@Monek Marie I have already started cutting apples. Do you peel them for apple leather or cook with the peel?

Either way @jowitt.europe , it depends on the apple. There's a lot of nutrition in the peels so if its a tender, clean peel I use it. I find if I keep the peel, its best to grind the apple and peel so they blend together better.

@monica197 Oh yes, I will. I have already promised to bring an apple cheese to my friend, so there is no excuse not to make it. I even have got a cheese bag for putting it into a cheese form 😊

I have made it! My first apple cheese. Well, it is cheese, because it is formed in a cheese bag. It is delicious and almost gone, although it is supposed to keep for a year or so. Ingredients: apples, sugar and cinnamon. It is quite work intensive, when one heats the apple mass, so that the liquid evaporates. One has to stir all the time for more than an hour, depending on the quantity. And it take a long time to dry. But it’s worth!

Would using a double boiler help with not needing to stir it constantly?
What qty of apples did you begin with? Then sugar and cinnamon taste I presume?

@monica197 I never thought of a double boiler... The purpose is to get rid of as much humidity as possible. A double boiler evaporates and increases humidity, but not inside. It is worth trying, because stirring for so long is tiring.
I use my apples with the peel. Any apples that fall and I cannot store for later use. Yes. Sugar and cinnamon is a matter of taste.

So, how does one stir less during a long cook time that is meant to produce a reduction...
I am going to ask a cooking pro I know...let me see shat she suggests.

We made apple leather a few years in a row, but the kids weren't into eating it after that. It's yummy now and then.
This year we are canning apple pie filling, and also trying to make apple pie jam.

@monica197 I have never used a crockpot. I do not have one. If you try out, let me know. The cheese is very popular. We are finishing the second out of two. Once we are back home I might make two more.
