I like the part about wine making itself. I make wine with just the fruit, no yeast added. Pineapple is the only fruit that I really don't care for after fermentation. Natural wine has a relatively low alcohol content. You have to use specific yeast and sugar to get a higher alcohol content.

I'm hoping to find persimmons this fall! Mom loves them, and I want to try them again. Didn't like them as a kid, but there are lots of things that I love now that I didn't then.
It won't frost for a while, yet.

I started 10 gallons of rice wine over the weekend - should be around 12% alcohol when done. I cut a whole section on apple cider due to length. It is a very enjoyable hobby!

Homemade hard apple cider is awesome. I make ACV because I can't get it raw here. I just finished the third batch, and it came out the best.

I agree. Hard cider is my favorite. All the commercial brands I have tried are way too sweet. I ferment mine dry so it is like champagne
