I was fascinated by this episode. Tap dancing for a workout? Sounds fun. I was waiting to see if it mattered which cinnamon one used. The Ceylon cinnamon is quite a bit more expensive although I found a bigger bag which makes it more affordable as I sometimes use quite a bit of cinnamon.

Not really. As long as it is labeled cinnamon and has a strong cinnamon flavor, it is usually pretty good.

    Great discussion @judsoncarroll4.

Another use for cinnamon. Helps to balance blood sugars. As little as 1/2 tsp per day.

So sprinkle it on your oatmeal or cereal. Add to beverages (great in hot chocolate). Add it to chocolate baked goods. Its in a lot of "jerk" recipes.

@MissPatricia There are 4 species of cinnamon with two species being the most commonly found on the market, C. verum or Ceylon cinnamon and C. cassia or Saigon cinnamon. These two species are used interchangeably. I prefer the Ceylon cinnamon myself. I think it has a better flavour. There is another spice called cassia buds which are the dried flower buds of the C. cassia tree. It has a different flavour profile and is used for more savoury dishes. My granny used to add them to homemade sweet mixed pickles whenever she could find them. They look quite a bit like clove buds.
